Garden Greens

A garden fresh salad is always welcome, and even though some winter gardens grow greens, it’s a sure sign that Spring is here when we start getting a bounty of salad greens from the garden.  Here’s the recipe for a favorite fresh-from-the-garden salad.

  • 1 bunch of read leaf lettuce
  • a small bunch of arugula (young & tender)
  • a spring onion (freshly dug)
  • 2 or 3 radishes
  • oil & vinegar
  • salt & pepper

Wash all the veggies, then slice the radishes and the onions.  Combine in a wooden bowl, toss with oil & vinegar  Throw a dash of salt, and grind some pepper on top.
